You can't go wrong with the Uncle John with a decent spec, a lot of the circuit riders race them and they have great mud clearance that comes into play sometime in November in the North West Cross scene!
Couple of other ideas - Kinesis Crosslight and Focus Mares Expert. I've got a Focus and I found that the spec was slightly better for the money when I bought it than most so worth a look maybe.
Any of them will be a good ride so it will come down to personal preference.
